Most cocktails in Canggu are poured. At Paisley — the speakeasy tucked inside the Mata Berawa compound on Jalan Berawa — they’re built. The difference shows up in the glass: head bartender Pandhu leans on local Indonesian ingredients rather than the usual imported syrups, so the drinks taste like where they’re made instead of like everywhere else.

What to order

• Mata Negroni — the house signature and the easiest way in. Pineapple-honey gin, jackfruit vermouth and Campari: a Negroni that grew up in the tropics, bitter and bright at once.
• Harvest Storm — the bartender’s own pride, and the one people don’t expect. A sesame-washed bourbon riff that arrives smelling of warm popcorn. Savoury, a little strange, quietly moreish.
• Karamata — the local highball. Balinese arak with jackfruit, pineapple and lychee — bright, easy, and built from the island. It’s also what pours during After 9, the Friday and Saturday ladies’ free-flow hour.
• Island Bloom — for the softer, floral end of the list.

Paisley isn’t built for volume. It’s dim, intimate, and unhurried — a listening room where the music leads and the conversation still works. Because it sits inside the compound, dinner at the warung rolls straight into a drink without moving your scooter. On selected nights, Live at Mata puts new artists on the stage playing their own songs.
