1. Paisley at Mata Berawa — the listening room
Tucked inside the Mata compound on Jalan Berawa — the quieter, eastern side of Canggu — Paisley is the one Canggu bar that runs on music rather than beside it. Its programme, Live at Mata, hands the stage to new and developing artists — and the rule is originals only, no covers. In a Canggu scene built on DJs and covers bands, that makes it about the only room in the area committed to original live music. The room is small, dim, and unhurried; the compound means dinner at the warung rolls straight into a drink without moving your scooter. The cocktails are built here, not just poured — head bartender Pandhu leans on local Indonesian ingredients, from the tropical Mata Negroni (pineapple-honey gin, jackfruit vermouth, Campari) to Karamata, a Balinese-arak highball with jackfruit, pineapple and lychee. His own pride is the savoury Harvest Storm, a sesame-washed bourbon riff that arrives smelling of warm popcorn.
